What’s cooking in the Hogwart’s Cafeteria?
On J.K. Rowling’s official site, the “Wizard of the Month” is Helga Hufflepuff. Certainly known as the founder of the Hufflepuff house at Hogwarts, Madame Hufflepuff is also, reportedly, renowned for her culinary expertise and magic. She is, according to the site, largely responsible for many of the recipes used at Hogwarts.
So in honor of Helga Hufflepuff, here’s a recipe for Yorkshire (terrier) Pudding
The first step is to make a delicious standing rib roast. I find that best recipe for roast beef is to get the best quality beef you can, season it simply with salt, pepper and raw onion sections, “oven sear” it in a very hot oven for the first 30 minutes of cooking time and then reduce the heat and roast to your desired “doneness”.
Whatever your favorite method - here’s what to do with the drippings…
Ingredients:
1 cup minus 1 T. flour
1/2 teaspoon salt
2 large eggs
1 cup milk
1/4 cup beef drippings or 4 T. warm melted unsalted butter
Directions:
Whisk together flour and salt. In a large bowl whisk together the eggs and milk. Add the flour mixture and beat until well blended. Heat a 13/9 baking pan, preferably glass or ceramic for 10 minutes and add the beef drippings or butter. Pour in the batter all at once. Bake for 15 minutes at 450 degrees then reduce the heat to 350 and bake until puffy and deep golden brown, 15 or 20 minutes more. Cut into squares and serve immediately.
