What’s cooking in the Hogwart’s Cafeteria?

BOUILLABAISSE
In a large pot add:
1 carrot
2 onions, chopped
2 leeks, chopped
1 clove garlic, crushed
Cook slowly over medium heat until golden brown.
Add:
2 lg. tomatoes, chopped or 1 c. canned tomatoes
1 bay leaf
2 c. fish stock, clam juice, or water
Simmer 20 minutes.
Add:
1 doz. oysters, clams, or mussels
1/2 c. pimentos, cut sm
Few grains saffron
Simmer until the shells open (about 5 minutes). Season to taste with salt and pepper.
Add juice of 1 lemon and 1 cup dry white wine.
Place one slice of French bread (toasted) in each bowl. Pour the soup over the bread.
Sprinkle with 1 tablespoon chopped parsley.
Serves 8.
*** Can substitute mild white fleshed fish for the shellfish
